- a soft, moist, spongy cake traditionally made from sago or tapioca flour (but often also rice flour), which is mixed with sugar, coconut milk, eggs, and an optional flavouring such as pandan or banana, then fermented with yeast (traditionally palm wine) before baking. Due to the fermentation process, the cake has characteristic long bubbles stretching from the top to the bottom. Despite the name, it is likely to have originated in Medan, Indonesia.
Up till then I haven’t even eaten the original Kuih Bingka Ambon from Medan, but I knew that what I baked was no where close to the real thing.
