- a type of handmade Hokkien noodle made by pinching and tearing flat, roughly rectangular pieces off a sheet of dough, or alternatively slicing rectangular pieces with a knife, resulting in flat noodles measuring roughly 2 cm by 4 cm and 2 mm thick. It is made of the same dough as pan mee and you mee.

Mee hoon kueh was one of the few things I was allowed to help make as a kid. These are handmade noodles, done without any of the faff of a pasta machine or even a rolling pin ... To make them, you simply tear off a piece of dough, crudely flatten it in between floury palms, and toss it into the boiling pot.

But there's something Tze Wei wouldn't touch—mee hoon kueh, a Hokkien dish of small dough pieces cooked in ikan bilis soup. I used to detest mee hoon kueh but when I was pregnant with Yen Nee, I developed a craving for it. That could explain why she likes to eat this soupy concoction.
