- a traditional Peranakan kueh consisting of an oblong-shaped roll of glutinous rice with a filling of hae bee hiam, wrapped in a pandan or banana leaf and grilled. The rice is mixed with coconut milk and salt and is often mottled with a striking blue colour extracted from the blue pea flower. It is similar to the Indonesian lemper.
Rempah udang means spices and prawns. So what's rempah udang if it does not have enough of either rempah or udang? Making it at home is the only way to ensure that you have plenty of both.
