- a rich, spicy, slow-cooked stew- or curry-like dish with cubes of diced meat (usually beef) and a base of coconut milk. The gravy uses a mixture of spices including galangal, lemongrass, chilli, ginger, turmeric, shallots, garlic, and other spices, fried in oil. The spice mix and beef are slow-cooked in coconut milk until the curry is almost dry and the ingredients have absorbed the liquid in the dish, resulting in a remarkably rich, complex, and flavourful curry. It is typically served with rice.
The dish supposedly originated in Minangkabau cuisine. While beef rendang is the most famous form of rendang, other meats can be used, such as in rendang ayam and rendang kambing.
There are several dishes that define Hari Raya – lemang, ketupat and, of course, rendang.
But for Nora’shah Ibrahim and her family in Kuala Kangsar, rendang is more than just a Raya tradition: it’s also how she keeps her late mother’s legacy alive.
