A type of noodle traditionally made by rolling a kneaded dough of wheat flour, salt, and water (and often egg) flat on a board and slicing them with straight cuts by hand using a wooden block as a guide, a technique originating in Hakka cuisine. It is made from the same dough as you mee and mee hoon kueh, and is often white in colour.
