  1. a paste or relish made from chilli and other spices or ingredients, such as ginger, garlic, lime juice, small shrimp, shrimp paste, etc. It probably originated in Javanese cuisine, and is now an integral part of the cuisines of many South-East Asian cultures. It comes in many forms and is often tailored to specific uses and dishes, such as a mostly sweet, smooth, low-pungency (spiciness) version for nasi lemak and a coarser, more chilli-centric version for ayam penyet.
